  1. Prepare of chantenay carrots.
  2. Prepare of swede or turnip.
  3. Prepare of medium onions.
  4. Prepare of medium dessert apples.
  5. Prepare of courgette/zucchini.

  7. You need of prunes.
  8. Prepare of garlic cloves crushed.
  9. You need of light brown sugar.
  10. You need of malt vinegar.
  11. You need of lemon juice.

My Ploughman's Pickle step by step

  1. Dice all the veg and fruit into small cubes about 0.5cm. Crush or finely chop garlic..
  2. Place all ingredients into a large pan and bring slowly to the boil.
  3. Simmer until carrots and swede are soft. 1 1/2 to 2 hours.
  4. You may need to add a bit of water if too dry.
  5. Pot into clean sterilized jars. Cover and seal.
  6. Label and date once cool.
  7. It takes about one month to mature..
