How to Cook Tasty Sambhar
Sambhar. Since a variety of mixed vegetables are also used to make sambhar it becomes nutrient rich. Sambar recipe shared here is the one which has been followed by my mum for several decades. The unique, accidentally invented delicacy was named after Sambhaji as 'sambhar'.

Ingredients of Sambhar
- Prepare 3/4 cup of tur/arhar(split pigeon peas).
- It’s of Vegetables.
- It’s 1/2 cup of lauki (bottle gourd)cubed.
- It’s 1/4 cup of pumpkin cubed.
- It’s 1 of carrot cut into small pieces.
- You need 1/4 cup of brinjal cubed.
- Prepare 7-8 of beans chopped.
- You need 1 tbsp of coconut chopped.
- You need 1 of tomato chopped.
- Prepare 1 tbsp of tomato puree.
- You need 1.5 tsp of sambhar powder.
- You need 1 pinch of hing/asafoetida.
- It’s 2 of dry red chillies.
- You need 1/4 tsp of turmeric powder.
- You need 1 tsp of red chilli powder.
- Prepare 1 tbsp of curry leaves.
- It’s 1 tbsp of coriander chopped.
- Prepare 2 tbsp of oil.
- You need 1/2 tsp of mustard seeds.
- It’s 5-6 of methi (fenugreek)seeds.
- Prepare 1/4 tsp of fennel seeds.
- You need To taste of salt.
- It’s 1 pinch of sugar or jaggery.
- You need 1 tbsp of soaked imli (tamarind)pulp.
- It’s 5-6 cup of water.

Sambhar step by step
- Soak tamarind in 1/4 th cup warm water.Soak dal with warm water for 15 minutes.Cube brinjal, lauki and pumpkin into 1 inch pieces.Cut carrots into small pieces.Chop beans.Chop onion and tomato.Boil all vegetables except brinjal with red chillies,chopped coconut and onion with 1/2 tsp salt.Add tamarind pulp.Pressure cook dal with turmeric and little salt upto 2 whistles.Open lid after 5 minutes..
- Add sambar masala to the dal.Heat oil and lightly fry brinjal till soft.Add vegetables and tomato puree to the boiled dal and boil.Heat oil and sprinkle mustard,fennel and methi seeds.When they crackle,sprinkle 1 pinch hing and curry leaves and fry.Add this to the dal and boil.Adjust salt and pinch of sugar.Serve hot with rice,idli,vada,dosa or uttappam..
